2 Cups Uncooked rice

2 Cups water


Set Instapot on to Rice setting.  Make sure gage is turned to sealing.


When rice is cooked, with tongs turn gage to venting for fast release.  When steam is fully released remove lid and stir rice with fork to fluff up.


Add 1 cup of raisins

½ Cup maple syrup

1 Tbsp vanilla (optional)

½ Tsp ground cinnamon

½ Tsp nutmeg

½ Tsp allspice (optional)

Stir into rice


Add 1 tin coconut cream

2 cups almond milk

Stir into rice mixture


Place lid on instapot.

Choose the slow cooker setting.

Cook on high 25 min.


If rice pudding needs extra time, choose timer and set or additional 5 min.,  stir and add additional time 1 min. At a time.


Pudding can be stored in the fridge for one week.  Extra pudding may be frozen for up to two months. Pudding can be reheated in a microwave oven.
